Friday Night Supper

After getting home this evening from a little shopping trip to Washington, La. I whipped up a little dinner for my honey and the little kids. 

  For an appetizer we had eggplant dip with bagel chips. 

Next we had a chopped salad, a creamy shrimp and shell pasta, and garlic green beans.  Yummy Yummy Yummy

Andrew was out with friends and cousins and the girls went to the NISH v Comeaux football game with Erica.  NISH won=) go Jackets!

 

I'm In Love....... With Eggplant!

If Heaven were a food I think it just might be this dish. Well Jessica and I think so anyway.

For lunch Friday Jessica and I decided to cook up some eggplant from Jacob's garden. We have been having lots of eggplant lately and we're not complaining.

First we sliced, battered, and coated the eggplant with wheat thin and saltine cracker crumbs. Then we very carefully pan fried them in olive oil.

Then we layered them with feta cheese, tomatoes, provolone cheese, sauteed onion rings and topped them with mozzarella cheese and put them under the broiler to brown the cheese. Oh my goodness the results were outstanding. Heaven on a plate and on my palate.

Served with pan grilled salmon topped with sauteed onion rings.
